Grasmere Gingerbread® Peanut Butter and Chocolate Biscuits


200g Grasmere Gingerbread® crumbs

25g unsalted butter melted

200g of good quality peanut butter or nut butter of your choice

200g dark chocolate at least 65%


  1. Line a shallow loaf tin with baking parchment and set aside.
  2. Combine the melted butter with the Grasmere Gingerbread® crumbs.
  3. Pour the mixture into the lined tin and compress the crumbs until they form a smooth base.
  4. Empty the peanut butter into a microwavable bowl and heat for 60 seconds.
  5. Stir and then pour over the crumb base. Set aside in the fridge for at least one hour to firm.
  6. Melt the dark chocolate in the microwave for 2 minutes 30 seconds until melted and glossy, pour over the peanut butter layer making sure that it is evenly spread.
  7. Refrigerate for a further hour.
  8. Lift the entire biscuit out of the mould using the edges of the baking parchment.
  9. Slice into bite size chunks and enjoy!
